"Tony Coturri, winemaker/owner of Coturri Winery in Glen Ellen has been growing organic grapes and making organic wine - a process he refers to as double organic - since opening his business 26 years ago. Yet Coturri chooses not to label most of his wine as organic - a decision related more to the marketing of the wine than to the winemaking process itself.

Our philosophy is that the process shouldn't come before the product," says Coturri. "The taste is what's important. Then if someone is interested, we'll talk about the process." Coturri likens it to visiting a restaurant and talking to the chef about his kitchen equipment and ingredients before you have tasted his food.

In addition to following organic principles, Coturri Winery also incorporates many aspects of Biodynamics, a growing movement, into its winemaking. Coturri calls Biodynamics the "spiritual sided of agriculture." The Demeter Association, which began certifying Biodynamic farms and products in 1928, maintains many of the same requirements that define organic farming. However, additional guidelines for Biodynamic certification include managing the entire farm as one living organism as well as an emphasis on composting. Biodynamics also requires that plantings are done during certain phases of the moon.

"It's not hocus pocus," Coturri says. "There is enough information out there to show that there is some merit to it." However, the part of Biodynamics that interests Coturri the most is the aspect of community involvement. "It's acting in a more regional way rather than pulling ingredients from all over the country and trying to mass produce," he explains.
